Today, I'm excited to share with you a scrumptious recipe that has become my go-to lifesaver – Tomato Basil Chicken Breast and Broccoli Alfredo.

Unveiling the Instant Pot: A Kitchen Superhero

The Instant Pot has truly earned its place as a superhero in my kitchen. This multi-functional wonder not only saves me time but also ensures that I serve up delicious, nutritious meals that satisfy even the pickiest eaters. For a busy mom like me, the Instant Pot has become a game-changer, offering a seamless and effortless cooking experience that doesn't compromise on taste. Tomato Basil Chicken Breast and Broccoli Alfredo

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups frozen broccoli florets
  • Your favorite can of alfredo sauce
  • 1 can diced tomatoes
  • 1 teaspoon dried basil (or fresh if you have it!)
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Even Easier Option

  • Store bought seasoned chicken
  • 1 TBSP Pesto

Skip to Step 1:

Instructions:

  1. Sauté Mode: Set your Instant Pot to sauté mode and heat some olive oil. Sauté the minced garlic until fragrant.

  2. Browning the Chicken: Season the chicken breasts with salt, pepper, and dried basil. Brown them in the Instant Pot on both sides for about 2 minutes per side. Remove and set them aside.

  3. Pressure Cooking:  Cancel the sauté mode and make sure there is no chicken pieces on bottom of dish, Gently place the browned chicken breasts in one side of the InstaPockets. Add 1 FULL CUP of water to the bootom of the InstaPockets. Close the Instant Pot lid, and set the valve to the sealing position. Cook on high pressure for 10 minutes.

  4. Quick Release and Serve: Once the cooking time is up, perform a quick pressure release. Carefully open the lid, and you'll be greeted by the most enticing aroma. 

  5. Broccoli and Alfredo Sauce: Once the Chicken has released, add the frozen broccoli covered with your favorite alfredo sauce into an InstaPockets and place inside the pressure cooker. Add another 1/2 Cup of water tot he bottom of the InstaPockets and cook on high pressure for 4 minutes. 

  6. Quick Release and Serve: Once the cooking time is up, perform a quick pressure release. Carefully open the lid, and you'll be greeted by the most enticing aroma. 

  7. Add pasta or serve immediately!
